Papa's vegetable bake is in regular rotation in our house. This meal is a little labor intensive with the vegetable chopping but in the end it's well worth it. We like to use a mixture of firm vegetable for this bake. Traditionally it's made it with kielbasa which is amazing too; we also like to add mild Italian sausage. Don't forget the fresh Italian bread.
Serves 6-8
Ingredients
1 - head of cauliflower cut into florets
1 - head of broccoli cut into florets
1-2 - yellow or red peppers cut into chunks
1 - small package of cremini mushrooms quartered
5-6 - russet potatoes cut into bite sized pieces
1 - medium to large onion cut into chunks
1/3cup - olive oil
1Tbsp - Italian seasoning (club house)
2-3 - garlic cloves minced
shredded parmesan cheese for topping
salt and pepper to taste
Directions
Pre heat oven to 425°
Prep all your vegetables and toss together in a large glass or casserole pan. Drizzle olive oil on the vegetables and turn to coat. Sprinkle the Italian seasoning, salt and pepper, and turn to coat. Roast vegetable for 45-60 minutes, turning vegetables every 15 minutes. During the last 20 minutes add the minced garlic turning to incorporate.
The vegetables are ready when a sharp knife slips easily into a potato. Sprinkle with parmesan cheese. Serve with crusty white bread, or a side salad.
