Anything Goes Granola Bars

A soft chewy, and slightly crisp granola bar is delectable to bite into. These granola bars are that! In their simplest form they require little chopping and effort and only a handful of ingredients. They contain no nuts, are a snap to make on short notice and they feel good to eat; why? because you know where all the ingredients come from. The add ins are endless and these can turn into a nut bar, or a fruit bar, or a fruit nut bar!

Yields 16 - 24 bars

Ingredients

  • 1 3/4 cup - oats rolled or steel cut

  • 1 1/4 cup - rice Krispies cereal

  • 1/3 cup - honey (I like apple honey, but flower works too)

  • 1/3 cup - lightly packed brown sugar

  • 1/3 cup - unrefined coconut oil or vegetable

  • 1/2 cup - mini chocolate chips

  • 1/4 cup - dried blueberries, marshmallows, nuts, or seeds etc.

Directions

Line or grease a brownie pan or square cake pan with parchment paper set aside.


Combine Rice cereal oat, nuts, and any *extras in a medium bowl

In a medium saucepan add the brown sugar, honey, and oil. bring to a boil for 5 minutes, alternatively using a candy thermometer boil until mixture reaches soft ball stage (winter) and hard ball stage (summer)

Quickly add sugar mixture to the dry ingredients mixing quickly to combine. Dump into prepared pan and spread out to fill, sprinkle with mini chocolate chips THEN PRESS INTO PAN.


* Be careful not to add to many "extras" as they may not be able to stick or adhere to the rest of the ingredients. I would keep it below 1/3 cup.


* Some extras we have used are dried fruits, nuts, seeds, marshmallows, graham crackers crumbles, coconut flakes, white & butterscotch chocolate chips, crumbled pretzels and more. We have also coated with icing sugar drizzle or a nut butter for extra protein. To fancy up for school snack or birthday parties add sprinkles in different shapes and colors after you have pressed the chocolate chips down.
